Ingredients for 3 servings:

  • 250 g sausage (ham sausage) in slices
  • 4 cl olive oil
  • 3 cl Balsamic vinegar, white
  • 2 cl vinegar (herb vinegar)
  • 2 shallots or 1 regular onion
  • 2 bell peppers, aromatic
  • 8 gherkins
  • Tarragon, dried
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 15 minutes

Own creation

Wash, deseed, and dice the bell peppers. Dice the gherkins. Peel and dice the shallots. Place everything in a bowl and mix well. Cut the ham sausage into even strips, halve the longer strips, and add the sausage to the bowl. Make a marinade from olive oil, balsamic vinegar, and herb vinegar. Sprinkle in a few dried tarragon leaves and mix everything well. Season with a little salt and plenty of pepper. Pour the marinade over the salad and mix everything well. Let it marinate for a few hours, stirring every two hours. Serve with fresh baguette.
