Ingredients for 4 servings:

  • 500 g pork, e.g. goulash
  • 1 apple
  • 1 red bell pepper(s)
  • 1 can pineapple, sliced
  • 2 tsp curry powder
  • 2 tbsp tomato paste
  • Paprika powder
  • salt and pepper
  • 1 tbsp oil

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Drain the pineapple, reserving the juice. Cut the pineapple into chunks. Cut the flesh into bite-sized pieces. Peel the apple, trim the bell pepper, and cut both into small pieces. Heat the oil in a pan and brown the meat until brisk. Then add the apple pieces and brown them as well. Stir in the tomato paste, sweat, and deglaze with the pineapple juice. Bring to a boil briefly. Add the bell pepper and curry powder and simmer for about 10 minutes. Add the pineapple pieces and simmer for another 10 minutes. Season with paprika, salt, and pepper. Serve with fried banana and rice.
