Homemade herb – olive oil (spicy)

Ingredients for 1 servings:

  • ¾ liter olive oil
  • 4 sprigs of thyme
  • 4 sprigs rosemary
  • 3 cloves garlic
  • 6 small Italian chili peppers (Pepperonico)

Working time approx. 10 minutes; Rest period approx. 21 days; Total time approx. 21 days 10 minutes

Place an empty wine bottle (clear glass) with a screw cap in boiling water and let it sit for about 1 minute. Remove the label from the bottle. Once the bottle has cooled, add the thyme and rosemary sprigs, the garlic (halved), and the pepperoni cheese, and top up with the olive oil. Let it rest in a dark place for about 3 weeks. The longer the oil sits, the more intense the aroma becomes! I use this oil for all Italian dishes that call for olive oil (including frying).
