Honey Cake – Basic Dough

Ingredients
 

  • 500 g Honey
  • 125 g Sugar
  • 150 ml Water
  • 650 g Wheat flour type 550
  • 250 g Rye flour
  • 30 g Deer horn salt
  • 60 g Ginger bread spice
  • 12 g Potash

Instructions
 

  • Mix honey, sugar and water in a saucepan and let get lukewarm (do not boil!)
  • Mix the flour, rye flour, deer horn salt, gingerbread spice and potash well. Then gradually pour in the still lukewarm honey-sugar solution and roughly mix everything with the dough hook of the hand mixer.
  • Now place the contents of the bowl on a worktop and knead vigorously with your hands (it is a little strenuous). At first you have the feeling that there is too much flour, but it is advisable to wet your hands well every now and then while kneading, so that the dough will gradually absorb all the flour.
  • Knead until you have a firm, shiny, rollable dough.
  • This basic dough can be safely wrapped in foil for a month. This has the great advantage that you can process it bit by bit
  • The above quantity refers to 1775 g of finished, reusable dough.
