Ingredients for 2 servings:

  • 500 g pork loin(s)
  • 500 g mushrooms
  • 1 small onion(s)
  • 1 cup crème fraîche
  • 8 slices of Gouda (toast-sized slices)
  • 4 slices of toast
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Pork loin with mushrooms on toast, topped with cheese

Trim the pork loin, cut into medallions, and season with salt and pepper. Finely chop the onion, clean and slice the mushrooms. Fry the medallions in a little oil on both sides for about 2 minutes and keep warm. Briefly sauté the onions in a little clarified butter or margarine in the same pan. Add the mushrooms and fry until they are nicely browned. Season with salt and pepper, stir in the crème fraîche, bring to a boil, and season to taste with salt and pepper. Toast the bread, arrange the loin on the toast, arrange the mushrooms on top, and top with the cheese. Bake in the oven until the cheese has melted.
