refreshing for hot days
Peel and slice the ginger. In a saucepan, combine the water, sugar, and ginger; bring to a boil. Reduce the heat, cover, and simmer for 5 minutes. Remove the pan from the heat, add the tea bags, and let it steep, covered, for 3 minutes. Remove the tea bags and ginger slices and let it cool slightly. I then pour the iced tea into a heat-resistant carafe, cover, and place it in the refrigerator. It should stand there for at least 2 hours or overnight. Pour into glasses and serve with ice cubes and lemon slices. This makes 4-6 glasses, depending on the size of the glasses. The iced tea is now sweetened to our taste—not too much, so it’s refreshing. If you prefer it sweeter, you can of course do that before refrigerating it.
