Ingredients for 4 servings:

  • 400 g flour
  • 1 packet of dry yeast
  • 1 tsp salt
  • 75 ml olive oil and some for brushing
  • 250 ml water, lukewarm
  • 1 egg(s)
  • 3 pinch(s) salt, coarse
  • some thyme, fresh or dried

Thoroughly mix the yeast, flour, and salt in a bowl. Mix the oil and just under 1/4 liter of lukewarm water together and pour into the flour. Knead everything into a smooth dough and knead vigorously with floured hands. Cover the yeast dough and let it rise in a warm place for about 30 minutes. Divide the dough in half and form two flatbreads, each about 20 cm in diameter. Place the breads on a baking sheet lined with baking paper and let them rise for another 15 minutes. Brush the surface with egg yolk and sprinkle with salt and thyme. Bake in a preheated oven at 175 degrees Celsius for 25-30 minutes until golden brown. 5 minutes before the end of the baking time, brush the surface thinly with oil.
