Ingredients for 4 servings:

  • 1 cup bulgur
  • 2 cups vegetable broth
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 cucumber(s), unpeeled
  • 1 lemon(s)
  • ½ bunch mint
  • 1 bunch of parsley
  • salt and pepper
  • Cumin powder
  • 2 tbsp olive oil
  • ½ garlic clove(s)
  • 1 tsp coriander, optional

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 49 minutes

Cook the bulgur in the broth for 3-4 minutes, then cover and let stand for 15 minutes. Meanwhile, finely dice the bell peppers and cucumber. Squeeze the lemon. Finely chop the parsley and mint. Combine the herbs with the squeezed lemon, olive oil, salt, pepper, garlic, cumin, olive oil, and, if desired, a pinch of coriander. Once the bulgur has cooled to lukewarm, mix everything together and season again if desired. The salad is ready to serve.
