Ingredients

  • 200 g Butter
  • 100 g Sugar
  • 1 packet Vanilla sugar
  • 1 Egg
  • 300 g Flour
  • 1 Orange fresh
  • 50 g Cranberries canned drained
  • 30 g Candied ginger
  • 700 g Apples fresh
  • 1 teaspoon Orange peel aroma or grated peel of an organic orange
  • 50 g Sugar
  • Some flour
  • Powdered sugar

Instructions

  • Knead the butter with sugar, vanilla sugar, egg and flour to make a shortcrust pastry. Wrap in cling film and put in the refrigerator for 30 minutes.
  • Squeeze the orange. Drain the cranberries. Cut the ginger into small pieces. Quarter and peel the apples, remove the core and cut into cubes. Mix with the orange juice.
  • Add the cranberries, ginger, flavor (or zest of orange peel) and sugar to the apples. Mix everything well. Let it steep for 30 minutes.
  • Roll out 2 / 3 of the dough on a little flour. Place in a greased tart pan (25 cm diameter). Prick the bottom several times with a fork. Bake in the oven at 175 degrees for 15 minutes.
  • Take the baking tin out of the oven. Spread the apple mixture on the floor. Roll out the remaining dough. Remove the strips and place them in a grid over the apples. Bake in the oven in about 30 minutes.
  • Take the cake out of the oven. Let cool and sprinkle with powdered sugar.
