Ingredients for 4 servings:
- 1,000 g mirabelle plums, pitted
- 500 g gelling sugar 2 : 1
- 1 tsp citric acid
- 6 cl Campari
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Mix the mirabelle plums with the gelling sugar and citric acid and let stand for about an hour. Then bring to a boil and simmer for 4 minutes. Add the Campari during the last half minute and immediately pour into prepared twist-off jars. I got 4.5 jars of 230 ml each.
