Kaiserschmarrn with oat flakes and linseed

Ingredients for 1 servings:

  • 1 egg(s)
  • 60 ml oat milk (oat drink)
  • 30 ml fruit juice
  • 1 shot of mineral water
  • 50 g spelt flour
  • 20 g oat flakes
  • 1 tsp, heaped flaxseed meal
  • ½ tsp baking powder
  • some lemon juice
  • some butter
  • 1 large apple
  • 150 g yogurt
  • e.g. agave syrup
  • n. B. raw cane sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Separate the egg whites from the yolks. Beat the egg whites in a small bowl until stiff peaks form. In another bowl, mix the egg yolks with the milk and fruit juice. Add the mineral water. Stir in the flour, oats, flaxseed, and baking powder. Drizzle in a little lemon juice and fold in the egg whites. Heat a medium-sized non-stick pan over medium heat and add a little butter. Once the pan is hot, pour in the batter and cook, covered, until the bottom is browned. Turn once and cook until the bottom is browned. Cut the apple into small pieces. Break the batter into smaller pieces with a spatula. Add the apple to the pan and let it stand on the stove with the lid on for a while, turning occasionally. Sweeten the yogurt with agave syrup. Arrange the Kaiserschmarrn on a plate and drizzle with the yogurt.
