Ingredients for 2 servings:

  • 6 carrots (approx. 500 g)
  • 1 lemon(s), untreated
  • 2 tbsp hazelnut puree
  • 2 tbsp coconut milk
  • 4 tbsp water
  • 1 tbsp parsley, freshly chopped
  • some herbal salt, to taste
  • Maple syrup to taste, alternatively Stevia
  • 2 tbsp sunflower seeds, for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Zest the lemon with a zester. Combine the zest with the juice of the whole lemon and all the ingredients, from hazelnut butter to maple syrup, in a bowl. Peel the carrots and finely chop them using a food processor or a grater. Add them to the dressing in the bowl. Mix everything well and garnish with the sunflower seeds.
