Ingredients for 2 servings:
- 6 carrots (approx. 500 g)
- 1 lemon(s), untreated
- 2 tbsp hazelnut puree
- 2 tbsp coconut milk
- 4 tbsp water
- 1 tbsp parsley, freshly chopped
- some herbal salt, to taste
- Maple syrup to taste, alternatively Stevia
- 2 tbsp sunflower seeds, for sprinkling
Instructions

Zest the lemon with a zester. Combine the zest with the juice of the whole lemon and all the ingredients, from hazelnut butter to maple syrup, in a bowl. Peel the carrots and finely chop them using a food processor or a grater. Add them to the dressing in the bowl. Mix everything well and garnish with the sunflower seeds.
