Combine silken tofu, sugar, and vanilla sugar. Whip the heavy cream and fold it into the silken tofu. Drizzle the sponge fingers with coffee and cover the bottom of a container about 5 cm high. Spread a layer of cream on top. Repeat two more times. Finally, sprinkle with cocoa powder. Let it sit in the refrigerator for at least 4 hours (overnight is even better). Important: Use genuine silken tofu; you’ll barely taste the soy.
