Ingredients for 1 servings:

  • 5 tbsp fresh lavender flowers
  • 6 tbsp spirit, 96% or grain
  • 750 ml wine (Riesling)
  • 1 kg gelling sugar
  • 1 lemon(s), the juice
  • some lavender flowers or branches

Steep lavender blossoms in the spirit for 4-5 hours. Strain through a fine tea strainer and press the soaked lavender blossoms well with a spoon. Combine the extract with the white wine (Riesling) in a large saucepan, stir in the gelling sugar and lemon juice, and bring to a boil. Boil gently, stirring constantly, until the mixture sets. Add a fresh lavender blossom or sprig to each jar. When the mixture sets, pour into prepared jars and seal immediately.
