Leek soup with salmon ham

Ingredients for 4 servings:

  • 500 g leek
  • 30 g butter or margarine
  • ½ liter meat broth (instant)
  • 100 g processed cheese with herbs
  • 125 ml cream
  • Salt
  • pepper
  • Nutmeg, freshly grated
  • 100 g ham (salmon ham)
  • 1 bunch parsley, flat

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim and wash the leeks thoroughly, then slice into rings. Sauté in butter or margarine. Add the broth and simmer for about 15 minutes. Remove about 1/4 of the leek and set aside. Purée the remaining leek in the soup with a hand blender. Add the cheese and cream and bring to a boil. Season to taste with salt, pepper, and nutmeg. Cut the smoked ham into fine strips. Chop the parsley. Add to the soup along with the remaining leek rings and serve.
