Ingredients for 4 servings:
- 4 chicken breast fillets, approx. 175 g each
- ½ lemon(s), grated zest and juice
- ½ orange(s), grated peel and juice
- 2 tbsp honey, liquid
- 2 tbsp olive oil
- 2 tbsp mint, freshly chopped
- salt and pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 10 minutes; Total time approx. 8 hours 40 minutes
for the grill
Wash the chicken and pat dry. Using a sharp knife, cut into 2.5 cm cubes and place in a bowl. Combine the zest and juice of the lemon and orange in a small bowl with the oil, honey, and mint; mix. Season with salt and pepper to taste. Pour the marinade over the meat and mix thoroughly. Cover the bowl with plastic wrap and marinate the meat in the refrigerator for 8 hours. Heat the grill. Drain the chicken cubes and reserve the marinade. Thread the meat onto several long metal or wooden skewers. If using wooden skewers, soak them in water first. Do not place the meat cubes too close together on the skewers, otherwise they will not cook evenly and will remain raw in the center. Grill the skewers over medium heat for 6-10 minutes, turning frequently and brushing with the marinade. Arrange on a serving platter and serve.
