Lemon Coconut Energy Balls

  • 80 g Desiccated coconut
  • 2 Pc. Lemons, the peel of them
  • 60 ml Lemon juice
  • 80 g Viscous honey
  • 30 g Liquid coconut oil
  • 0,5 tsp Turmeric
  • 0,5 tsp Ground ginger
  • 4 tbsp Ground tiger nuts, optional
  • 1 Vials Lemon flavor, optional
  • 5 tbsp Desiccated coconut
  1. Chop the cashew nuts with the remaining ingredients in the food processor. If the mass is too moist, I add the tiger nuts, otherwise it is not absolutely necessary. I only add lemon aroma if the taste is not yet lemony enough for me.
  2. Let the mixture stand in the refrigerator for about 1 hour and then shape it into walnut-sized balls and roll them in the desiccated coconut. Then store in the refrigerator or freeze.
