Lemon Coconut Energy Balls

Also:
- 80 g Desiccated coconut
- 2 Pc. Lemons, the peel of them
- 60 ml Lemon juice
- 80 g Viscous honey
- 30 g Liquid coconut oil
- 0,5 tsp Turmeric
- 0,5 tsp Ground ginger
- 4 tbsp Ground tiger nuts, optional
- 1 Vials Lemon flavor, optional
- 5 tbsp Desiccated coconut
- Chop the cashew nuts with the remaining ingredients in the food processor. If the mass is too moist, I add the tiger nuts, otherwise it is not absolutely necessary. I only add lemon aroma if the taste is not yet lemony enough for me.
- Let the mixture stand in the refrigerator for about 1 hour and then shape it into walnut-sized balls and roll them in the desiccated coconut. Then store in the refrigerator or freeze.
