Lentil salad, Turkish version

Ingredients for 6 servings:

  • 1 can of lentils
  • 1 cucumber(s)
  • 3 spring onions
  • 1 large tomato(s)
  • ½ bunch flat-leaf parsley
  • 2 pointed peppers
  • salt and pepper
  • olive oil
  • lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rinse the lentils briefly under running water and drain well. Deseed and finely dice the tomato and cucumber. Finely chop the bell peppers and spring onions. Chop the parsley if desired. Mix everything with the lentils and season with olive oil, salt, pepper, and lemon juice.
