Lentil stew with sausage

Ingredients for 4 servings:

  • 500 g lentils
  • 2 liters of water
  • 2 tbsp butter
  • 2 onions
  • 1 clove(s) garlic
  • 1 bunch of parsley
  • 4 slices of celery
  • salt and pepper
  • 3 tbsp vinegar
  • 4 sausages (ham crackers)

Instructions

Working time approx. 25 minutes; Rest time approx. 15 hours; Total time approx. 15 hours 25 minutes

Soak the lentils in the water the night before. Finely chop the onions and sauté them with the butter in a large pot. Then, press the garlic clove and sauté it briefly. Add the lentils and water to the pot and simmer over medium heat (until the lentils are soft), about 30-40 minutes. Dice the celery and add it to the pot with the finely chopped parsley. Cook for another 6-7 minutes. Then, remove 50 percent of the lentils from the pot, puree them, and return them to the pot. Now, slice the sausages and warm them in the pot.
