Light apple muffins with oat flakes and cinnamon

Ingredients for 12 servings:

  • 200 g flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon powder
  • 60 g oat flakes
  • 65 g sugar, brown
  • 2 apples
  • 1 egg(s)
  • 1 tbsp oil
  • 100 g natural yogurt, low-fat
  • 125 ml milk, low-fat

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Light Apple Cinnamon & Oat Muffins

Preheat the oven to 180°C. Mix the flour with the baking powder. Set aside 1 tablespoon of the oats. Peel, core, and dice the apples. Add the cinnamon and remaining oats, brown sugar, and diced apples. In a separate bowl, combine the egg, oil, yogurt, and milk. Add the flour, oat, and apple mix from the other bowl and mix well. Spoon the batter into muffin cups. Sprinkle the remaining tablespoon of oats over the batter. Bake in the oven for about 20 minutes until golden brown (if using large muffin cups, bake for about 5-10 minutes longer). This makes 12 regular muffins or 8 large muffins.
