Light pineapple dessert with yogurt

Ingredients for 4 servings:

  • 1 pineapple, fresh
  • 500 g unsweetened yogurt, at least 3.5% fat content
  • 8 sprig(s) mint, fresh or more
  • 2 tbsp brown sugar
  • possibly cinnamon
  • possibly nuts
  • possibly cardamom
  • possibly lime(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the pineapple generously to remove any woody bits (or make them easy to remove), then cut into thin slices (no more than 1 cm thick). Whisk the yogurt until creamy. Crush the mint leaves and brown sugar in a mortar and pestle. To serve, arrange the pineapple slices in a circle on four plates, place a small heap of yogurt in the empty center, and sprinkle everything with the mint sugar. Garnish with mint leaves. If a feast is very rich, this makes a light dessert. If you like, you can discreetly sprinkle some cinnamon, chopped nuts or cardamom, or chopped lime strips on top, but it’s not necessary; it tastes just as it is.
