Ingredients for 4 servings:
- 1 cup herb curd
- e.g. juice (beetroot juice) from the jar or cucumber juice
- some salt and pepper
- some sweetener, liquid or sugar or stevia
- 150 g natural yogurt

Dressing for fish and salad
Mix the quark with a little beetroot juice and the yogurt until well combined. The dressing shouldn’t be too thin. Season with salt, pepper, and a dash or two of sweetener. The dressing also tastes good using the water from pickled cucumbers. For a simple yogurt dressing, you can omit the juice or cucumber liquid and refine it with fresh herbs or leeks.
