Low-Carb Chocolate Mousse

Ingredients for 4 servings:

  • 1 cup whipped cream
  • 2 eggs
  • 4 tsp, heaped cocoa powder, slightly defatted
  • Liquid sweetener
  • n. B. flavoring e.g. rum or vanilla

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Low-carb

Separate the eggs. Whip the cream until stiff peaks form. Whisk the egg whites until stiff peaks form. Beat the egg yolks until creamy, then add the cocoa powder, sweetener, and flavorings, and mix thoroughly again. Add 1 tablespoon each of egg whites and cream to the chocolate mixture and mix again. Add the remaining egg whites and cream to the chocolate cream and fold in gently (do not stir) until a smooth, fluffy cream forms. Transfer the chocolate mousse to a bowl or dessert dish and refrigerate overnight, ideally.
