Ingredients for 2 servings:

  • 2 fish fillets (250 g each), e.g., redfish, zander, Alaska pollock
  • 1 tbsp mustard
  • 2 tbsp olive oil
  • ½ lemon(s), squeezed
  • 50 g Parmesan, grated
  • 50 g ground almonds
  • salt and pepper
  • Oil for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Low-carb

Thaw the fish fillets (if frozen). Preheat the oven to 200°C (400°F) top/bottom heat. Brush a baking dish with oil and place the fish in the center. In a bowl, combine the grated Parmesan, ground almonds, lemon juice, mustard, and olive oil with salt and pepper. Knead well with a fork. Then spread the crispy coating over the fish fillets and press down firmly. Place the fillets in the oven for 20 minutes and remove them when they are nicely browned.
