Low-carb rice pudding in 10 minutes

Ingredients for 1 servings:

  • 250 g konjac rice, drained
  • 150 ml milk or soy milk
  • ½ tsp konjac flour
  • 2 tbsp honey or sweetener of your choice
  • ½ vanilla pod(s), including the pulp
  • ½ tsp cinnamon powder
  • 100 g fruit of your choice

Working time approx. 5 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 8 minutes

Remove the konjac rice from the packaging, drain the water, and rinse it in a sieve with clean water. The konjac rice may have a slightly fishy smell, which will dissipate as you go. Otherwise, it is tasteless and will absorb the flavor of the ingredients. Using a whisk, thoroughly mix the milk with the konjac flour as a thickener. Place the konjac rice and the milk mixture in a saucepan and simmer on medium heat for about 3 minutes, until the desired consistency is reached. Sweeten the boiled rice pudding and add the vanilla and cinnamon. Important: Season to taste! Wash the fruit, chop it up, and serve with the rice.
