Lumberjack dumplings

Ingredients for 2 servings:

  • 300 g flour
  • 70 g butter, melted + a little more for frying
  • 125 ml milk
  • 2 eggs
  • Salt
  • 2 onions
  • 100 g cheese, grated
  • possibly bacon, diced
  • pepper

Instructions

Whisk together flour, melted butter, milk, eggs, and a pinch of salt. Using a teaspoon, scoop out small dumplings from the mixture and cook in boiling salted water for a few minutes (I’d estimate about 5 minutes). Ladle the dumplings into a sieve and rinse with cold water. Melt a little oil or clarified butter in a pan. Peel the onions and slice them into thin rings, then fry them in the pan until light brown. Add a knob of butter to the pan and melt. Add the dumplings and sauté until hot, season with salt and pepper. Sprinkle with about 100g of grated cheese and let it melt with the lid closed, then serve. If you like, you can melt some bacon in the pan along with the onions. I often make double the batch so I have some left over for the next day. The dumplings also taste great with various pasta sauces.
