Lumberjack Steak with Bacon Beans

  • 600 g Beans green fresh

  • 4 Discs Pork steaks
  • Pepper from the grinder
  • Sweet paprika
  • 3 tbsp Clarified butter
  • 2 Pc. Fresh onions

  • 125 g Diced Bacon
  • 80 g Herb butter
  1. Clean the beans, cook in salted water for about 7 minutes, quench and drain. Preheat the oven to 120 ° C (convection: 100 ° C). Rinse the meat, pat dry, season with salt, pepper and paprika. Sear the steaks in an ovenproof pan in 2 tablespoons of hot lard for 2-4 minutes on each side. Let simmer in the oven for about 10-15 minutes. In the meantime, peel, dice or chop the onions. Leave the bacon in a pan, add the onions and beans, add the remaining lard if necessary. Let simmer for 1-3 minutes. Fold in the chopped parsley and season with salt and pepper.
