Ingredients for 2 servings:
- 50 g cashew nuts
- 400 ml water
- Chia seeds, ratio 1:6
- 1 tsp maca powder
- 1 tbsp yacon syrup
- 1 tbsp coconut blossom sugar or 3 dates
- 1 tsp vanilla powder or 1/2 vanilla pod
- ¼ tsp salt
- ¼ tsp tonka bean(s), ground
- 1 pinch of cinnamon
Instructions
Working time approx. 20 minutes; Rest time approx. 15 minutes; Total time approx. 35 minutes
Raw food, vegan, dairy-free, lactose-free
Blend all ingredients at high speed until a creamy milk forms. Stir in the chia seeds at a ratio of 1:6 (chia to water) and let it sit for 15 minutes. Stir every 5 minutes and then refrigerate until ready to serve. The pudding will keep for 2-3 days. Other variations: Hazelnut vanilla milk for hazelnut chia pudding; chocolate milk for chocolate chia pudding; strawberry milk for strawberry chia pudding.
