Madeleines with chocolate filling

Ingredients for 1 servings:

  • 60 g white chocolate
  • 2 tbsp cream
  • 30 g butter
  • 40 g sugar
  • 50 g flour
  • 1 tsp, leveled baking powder
  • 2 eggs
  • 25 g almonds, chopped

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour 50 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 30 minutes

for approx. 9 Madeleines

Melt the chocolate and cream in a double boiler. Mix together and refrigerate for about 1.5 hours until the mixture has solidified again. If you need to do this faster, you can also place the mixture in the freezer. Preheat the oven to 240°C. Form the solidified mixture into small balls in the palm of your hand. Refrigerate for another 10 minutes. Melt the butter and place it in a bowl. Add the sugar, flour, eggs, and baking powder, mix, and let stand for 5 minutes. Pour the batter into the madeleine baking pan and press a chocolate ball into each one. Add grated almonds, if desired. Bake for about 8-9 minutes. Makes about 9 madeleines.
