- 1 kg strawberries, fresh, preferably from the field
- 500 g gelling sugar 2:1
- 1 pack of vanilla sugar, 8 g

Rinse and disinfect the jars that will later hold the jam with boiling water. When the water is boiling, fill the jars and lids, or overfill them. Be careful, the jars will be extremely hot. Now you can prepare the strawberries, trimming off the green ends and quartering the strawberries. Then put them on the stove and bring to a boil. Next, sprinkle the sachet of vanilla sugar over them and blend everything for 1-2 minutes until the strawberries form a paste. As soon as the mixture starts to steam, add the gelling sugar. Stir everything well and blend a second time until the jam is as fine as you want it to be. Once the mixture is boiling, simmer over high heat for another 3 minutes. Stir constantly to prevent sticking. After 3 minutes, turn off the heat and test for settling. To do this, take a spoon, put a small dollop of jam onto a plate, wait a few seconds, and then turn the plate upside down. If the jam stays put and doesn’t fall off or shift, you have the perfect consistency. Now, without delay, pour the jam into your jars, ideally using a funnel. Fill the jars as full as possible, screw the lids on tightly, and turn them upside down. Caution: The jars will be very hot! Allow the jam to cool for a few hours before opening the first jar.
