Ingredients
 

dough

  • 250 ml Water
  • 2 Eggs
  • 1 pinch Salt
  • 1 shot Cooking oil
  • 700 g Wheat flour

Meat filling

  • 500 g Minced meat
  • 4 Onions
  • 2 Garlic cloves
  • 1 pinch Salt and pepper
  • 1 pinch Cumin

Instructions

  • For the dough, mix the cold water, eggs, salt and a tablespoon of cooking oil in a glass.
  • Slowly add the water from the glass to a well made of flour and create a smooth noodle piece. The dough should not become too hard or too dry.

filling

  • For the filling, put the minced meat, finely chopped onions and garlic in a bowl, season with salt, pepper and cumin and mix everything together.
  • Roll out the dough into small circles, not too thinly, in small portions. Fill the dough cookies with the meat filling and press them together so that the juice does not leak out when steaming.
  • The finished dumplings are steamed in a pressure cooker on the oil-brushed bases for about 45 minutes.
  • The mantis are served with a lot of fried onions, smetana (Russian sour cream) or with spicy tomato salad or spicy tomato sauce.

Flatbread

  • You can make small flatbreads from leftover dough: roll out the dough, brush with cooking oil, fold it up, roll it out again lightly - repeat this process 2-3 times. Shape into small flatbreads and fry in a pan until golden brown.
