Marinated anchovies with onions and capers

Ingredients for 4 servings:

  • 1 jar anchovy fillet(s)
  • 1 onion(s), red
  • 2 tsp capers
  • salt and pepper
  • Sugar
  • olive oil
  • Red wine vinegar

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Rinse the anchovies and pat dry. Slice the onion into very fine rings, or better yet, grate them. Drain the capers. Sprinkle the onions with a pinch of salt and massage them in with your fingers until they soften, then let them sit for a short while. This will reduce the oniony taste and make them a little sweeter. Make a dressing with olive oil, red wine vinegar, salt, pepper, and sugar. Be careful with the salt, as the anchovies will still taste salty. Arrange the anchovy fillets on a plate. Distribute the onions over the top, leaving the juices to run. Sprinkle with the capers. Pour the dressing over the onions and let them sit for about 30 minutes. Add a little fresh pepper to taste. Serve with fresh baguette.
