Ingredients for 4 servings:
- 3 small pork fillets (250 g each)
- 3 tbsp honey (wildflower honey)
- 3 tbsp brandy
- 2 tbsp balsamic vinegar
- 2 tbsp peppercorns, green
- 1 sprig(s) sage
- 16 slice(s) breakfast bacon, thin
- 4 strawberries
- Salt
- Herbs and olives for garnishing
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Cut the fillets into medallions and place them in a shallow dish. Mix the honey with brandy, vinegar, and peppercorns. Brush the medallions with the mixture, and cover and marinate for about 1 hour. Turn the meat over after 30 minutes. Pat the medallions dry and wrap them with sage leaves and bacon. Thread two medallions onto each skewer. Rinse and slice the strawberries. Place the skewers on the grill, season with salt, and grill for 3 minutes. Then turn them over, arrange the strawberries on top, and grill for another 3 minutes. Serve garnished with herbs and olives. Per serving: 360 kcal, 45 g protein, 13 g fat, and 12 g carbohydrates.
