Marinated mackerel fillets

Ingredients for 2 servings:

  • 4 mackerel fillets with skin, fresh, approx. 100 g each
  • 30 g sea salt
  • 20 g sugar
  • 300 ml water, hot
  • 75 ml white wine vinegar
  • 75 ml water
  • 15 g sugar
  • 10 grains of black pepper
  • 20 slice(s) carrot(s), very thinly sliced
  • 1 small shallot(s), very thinly sliced

Instructions

Working time approx. 15 minutes; Rest time approx. 1 day 3 hours; Total time approx. 1 day 3 hours 15 minutes

healthy snack

Place the fresh mackerel fillets in a shallow dish. Dissolve the salt and sugar in hot water and let cool. Pour over the fillets and let rest for about 3 hours. In the meantime, prepare the marinade. Simmer all ingredients for 4 minutes, let cool, and set aside. Drain the marinade from the fillets and baste the fillets with the marinade. Let stand in the marinade for at least 24 hours. Before serving, drain the marinade and garnish the fillets with a few carrot and shallot slices on plates. If possible, have the fishmonger fillet very fresh mackerel and process it quickly.
