Marinated mushrooms

Ingredients for 4 servings:

  • 500 g mushrooms, fresh
  • 250 ml olive oil
  • Salt
  • pepper
  • 1 shot of cognac
  • 1 chili pepper(s)
  • oregano
  • Garlic, fresh sliced, about 2-3 cloves
  • Bay leaf
  • some parsley, flat cut into strips

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

Clean the mushrooms if necessary, cut them into thick slices, and quickly fry them briefly in a little olive oil, making sure that too much water is not released. Deglaze with the cognac. Season with salt and pepper, and place them in a shallow casserole dish with the mushroom liquid. Heat the remaining olive oil with salt and pepper and the remaining ingredients, bring to a boil briefly, let cool slightly, pour over the mushrooms, and let them marinate in the refrigerator for about 24 hours. Sprinkle with flat-leaf parsley before serving.
