Marinated Potato and Zucchini Side Dish

The perfect marinated potato and zucchini side dish recipe with a picture and simple step-by-step instructions.

for the marinade:

  • 1 Pc. Medium-Sized zucchini
  • 4 tbsp Sweet and sour chili sauce
  • 1 tbsp Honey
  • 1 tbsp Soy sauce
  • 2 tbsp Olive oil
  • 1 piece Clove of garlic
  • 1 tbsp Fresh, finely chopped rosemary
  • Salt pepper
  1. Peel the barely cooked potatoes as desired or leave the skin on. Halve depending on the size. Halve the zucchini lengthways and cut into approx. 1 cm thick slices. Put both in a bowl.
  2. For the dressing, stir together the chilli sauce, honey, soy sauce, olive oil and rosemary. Salt and pepper. Squeeze the clove of garlic. Pour the marinade over the vegetables and leave to stand, covered, for at least 1 hour.
  3. Then distribute everything in a baking dish and bake in the preheated oven at 200 degrees on the middle rack for about 30 minutes.
  4. The dish is an ideal accompaniment to grilled or fish dishes. Tastes warm and cold.
