Ingredients for 4 servings:
- 250 g Hokkaido pumpkin(s)
- 100 ml mirin
- 100 ml rice vinegar
- 1 chili
- 1 small piece(s) of ginger
- 2 sprigs of thyme
- 3 strips of organic lemon peel
- Salt
- 2 tbsp sugar
Instructions
Working time approx. 10 minutes; Rest period approx. 1 day; Total time approx. 1 day 10 minutes
The little pumpkin surprise.
1. Hollow out the pumpkin, slice it into thin slices, and place them in a preserving jar. 2. Add all other ingredients to the pumpkin in the jar and let it steep for at least 24 hours. Make sure the pumpkin pieces are completely covered; add more water if necessary. 3. Serve as desired. It goes great with salads, meat, or as a snack. 4. Keeps refrigerated for 3-5 days.
