Marinated strawberries with mozzarella

Ingredients for 4 servings:

  • 1 passion fruit
  • 1 orange(s) or lemon, untreated
  • 3 tbsp sugar
  • 50 ml port wine
  • a few basil leaves
  • 250 g buffalo mozzarella
  • 500 g strawberries
  • some pepper, green or Szechuan

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Starter or small summer dish

Halve the passion fruit, scoop out the seeds and flesh, pour through a tea strainer, and collect the juice. Peel the orange or lemon zest with a zester. Juice the fruit. Caramelize the sugar in a pan and deglaze with lemon or orange juice and port wine. Let it cool, then add the passion fruit juice. Slice the basil and hull and slice the strawberries. Slice the mozzarella. Arrange the strawberries and mozzarella on plates. Pour the marinade over the mixture and sprinkle with lemon or orange zest, basil, and pepper. This recipe serves as an appetizer for 4 people and as a small summer dish for 2 people.
