Mascarpone cream with strawberries

Ingredients for 8 servings:

  • 600 g quark (low-fat quark)
  • 400 g mascarpone
  • 100 ml milk
  • 1 lemon(s), the juice
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 vanilla pod(s)
  • 5 tbsp Amaretto
  • 400 g strawberries
  • 30 g biscuits (amaretti biscuits)

Instructions

Working time approx. 35 minutes; Rest time approx. 20 hours; Total time approx. 20 hours 35 minutes

Combine the quark, mascarpone, milk, lemon juice, 100g sugar, and vanilla sugar with the whisk of a hand mixer. Score the vanilla pod lengthwise, scrape out the seeds, and add to the quark mixture. Stir in the amaretto. Transfer to a bowl and chill. Meanwhile, hull and wash the strawberries, then halve or quarter them depending on their size. Sprinkle with the remaining sugar and let stand for about 15 minutes. Distribute the strawberries and amaretti biscuits over the mascarpone cream. Garnish with lemon balm, if desired. If children are sharing, you can replace the liqueur with orange juice.
