Matjes Chopsticks

The perfect matjes chopsticks recipe with a picture and simple step-by-step instructions.

  • 200 g Herring fillet

  • Black pepper from the mill

  1. Rinse the matjes fillet and dry on kitchen paper – then cut the matjes into very small cubes
  2. Halve the cucumber and scrape out the stones – cut into very small cubes – also cut the onion and egg into very small cubes – put all the ingredients in a bowl – 1 tablespoon of grainy mustard – add the juice of half a lemon and plenty of pepper from the mill
  3. Cut the chives into rolls while leaving a few tips behind for decoration – finally lift the chives rolls under the hackers-
