Mediterranean oven-baked vegetables

Ingredients for 4 servings:

  • 1 red bell pepper(s)
  • 2 yellow bell peppers
  • 2 zucchinis
  • 2 onions, red
  • 1 lemon(s)
  • 250 g mushrooms
  • 1 tbsp olive oil
  • 1 tbsp herbs (herbs de Provence)
  • salt and pepper

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Cut the bell peppers into pieces, slice the zucchini, quarter the onion, and wipe the mushrooms with a paper towel; do not wash them. Mix the olive oil, lemon juice, and herbs. Place the vegetables in an ovenproof dish and stir in the oil, lemon juice, and herbs. Season with salt and pepper. Bake the vegetables on the middle rack for about 30-45 minutes. Serve with baguette, ciabatta, or simply with some fish.
