Metaxa sauce

Ingredients for 1 servings:

  • 4 shallots
  • 4 garlic cloves
  • 6 cl Metaxa
  • 150 g tomato paste
  • 200 g sour cream
  • 200 g cream
  • 300 ml vegetable stock
  • some salt and pepper
  • 1 tsp sugar
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Finely dice the shallots and sauté in a pan with olive oil. Finely chop the garlic and add it to the onions in the pan. Add the tomato paste and sauté, stirring constantly, making sure nothing burns. Deglaze with Metaxa and add vegetable stock. Simmer for about 5 minutes. Purée the sauce, add the sour cream and cream, mix well, and heat through. Season to taste with salt, pepper, and sugar.
