Ingredients for 4 servings:

  • 300 g flour
  • 200 g butter
  • ½ tsp salt
  • 4 tbsp water, cold
  • 100 g bacon, streaky, diced
  • 500 g sausage (coarse spreadable mettwurst)
  • 4 tbsp chopped mixed herbs (parsley, chives, chervil, lemon balm)
  • 4 eggs
  • 2 tbsp milk
  • Butter for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Make a shortcrust pastry from flour, butter, salt, and water. Grease a springform pan and line it with two-thirds of the pastry. Sprinkle with diced bacon. Divide the spreadable sausage into balls and sprinkle with herbs. Make four hollows in the mixture and break a raw egg into each. Roll out the remaining pastry and use it to cover the pie. Press the edges together firmly and cut an air hole in the center. Brush this with milk. Bake at 220°C for 15 minutes, then at 170°C for another 15 minutes.
