Ingredients for 1 servings:

  • 40 g lentil flour, red or spelt or wheat flour
  • 20 g oat flakes, flower-soft
  • 4 g stevia powder or 40 g xylitol or sugar
  • 1 tsp baking powder
  • 1 egg(s), size M
  • 1 tbsp rapeseed oil
  • 100 g low-fat curd cheese
  • 4 tbsp water

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

First combine the dry ingredients, then add the wet ingredients and mix thoroughly. Place the batter in a suitable dish and microwave for approx. 4-5 minutes at 800 W. Since microwaves vary greatly in power, please approach these values ​​​​carefully. The cake may burn on the inside! You can check whether the cake is fully baked with the toothpick test. This is a basic recipe for the batter. The cake can be refined as desired, e.g. with cinnamon, cocoa powder or chocolate chips. Recommendation: Sprinkle cocoa powder with 90% cocoa content on top before baking. Let cool for approx. 5 minutes after baking. With stevia, the cake will be slightly bitter. With xylitol it tastes great, but it will have about 100 kcal more.
