Minced meat, cheese and leek soup

Ingredients for 4 servings:

  • 500 g minced meat, mixed or beef
  • 1 leek(s)
  • 2 bunch of spring onions
  • 2 tbsp, heaped herb cream cheese
  • 1 liter vegetable broth
  • 1 tbsp, leveled pepper
  • 1 tbsp, heaped paprika powder, hot
  • 1 tsp, leveled cayenne pepper
  • 2 pinches of salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

with herb cream cheese

In a bowl, mix the minced meat with the spices and let it simmer. Wash and slice the leek. Wash and slice the spring onions. Use the green parts of the spring onions. Fry the minced meat thoroughly in a little butter or vegetable cream. Add the leek and spring onions and mix. Add the previously boiled vegetable stock and heat briefly. Finally, add the cream cheese and mix well until no lumps remain. Let the soup simmer for a few minutes over very low heat.
