Ingredients for 2 servings:

  • 125 g rice
  • 200 ml vegetable stock
  • 150 g minced meat (of your choice)
  • 200 g leaf spinach (frozen)
  • salt and pepper
  • 1 small chili pepper(s), dried
  • 1 cup of natural yogurt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

In a large, deep, non-stick pan, fry the minced meat (season with salt and pepper) until crumbly. When the mince is nice and crispy, add the vegetable stock, rice, frozen spinach, and finely chopped chili pepper (seeded if you don’t want it too spicy). Stir well and cover. Simmer on medium heat for about 18-20 minutes. The water should be completely absorbed. Then season again with salt and pepper and stir in the natural yogurt.
