low carb, Dukan-compatible

Preheat the oven to 180°C fan/convection oven. Slice the spring onions into rings. Whisk the egg and quark thoroughly, then season. Season to taste. Mix in the spring onions, beat the egg whites until stiff peaks form, and then fold into the quark and egg mixture. This mixture is enough for about 4-5 muffin cups. Line the bottoms of silicone muffin cups with salmon ham or the desired filling. Pour the quark and egg mixture over the top, but don’t overfill, as it will rise slightly in the oven. Sprinkle with grated cheese if you like. Bake in the oven for about 30-35 minutes, until golden brown.
