Mountain Farmers Schmarrn

- 500 g Jacket potatoes
- 2 Pc. Onions
- 2 Pickles
- 100 g Smoked bacon streaked
- 4 cl Instant broth
- 2 tbsp Oil
- 8 Eggs
- 0,5 tbsp Dried marjoram
- 5,5 tbsp Chives
- 1,5 tbsp Chopped parsley
- 1 tsp Caraway seeds
- Salt and pepper
- Peel the potatoes until they are cooked and let them steam out, when they have cooled down, cut into slices. Peel the onions and cut into strips and cut the smoked bacon into strips.
- Leave the bacon in the broth until it is nice and crispy. So now stir the potatoes in the hot oil in the pan, add the onion and let it sweat until it has turned a nice color.
- Add the bacon and fold in. Season the whole thing with the spices and then pour the well-beaten eggs over it, fold it in well and let everything set nicely, finally lift the cucumber strips underneath and serve sprinkled with chives. We had a colorful salad with us. I wish good appetite.
