Ingredients for 4 servings:
- 200g mozzarella
- 200 g mango(s)
- 1 bunch of wild garlic
- 6 tbsp olive oil, mild, good quality
- 6 tbsp balsamic vinegar (blueberry balsam with 3% acid)
- Fleur de Sel

Cut the mozzarella into slices and halve them. Use a vegetable peeler to cut the peeled mango into strips. Wrap the wild garlic in the mango strips, leaving the strips exposed. Arrange these rolls on top of the mozzarella slices. Whisk the blueberry balsamic with olive oil in a cup. Drizzle the dressing over the mango mozzarella and serve sprinkled with fleur de sel. Alternatively, you can dice the mango. Mix these cubes with the finely chopped wild garlic, the blueberry balsamic, the olive oil, and the salt, and place the marinated mango cubes on top of the mozzarella. Instead of fresh wild garlic, you can also use wild garlic pesto, but then you can omit the salt. Or you can use basil and spring onions instead of wild garlic. In either case, use both together for a balanced flavor.
