My iced tea – peach with lemon
- 650 g Fresh peaches
- 1 tsp Vanilla flavor
- 70 g Cane sugar
- 750 ml Water, filtered
- 3 tbsp White tea (Pai Mu Tan) a mixture of oolong & green tea
- 1 Organic – lemon, juice & zest
Pot – preparation without picture description
- Wash the peaches, cut into wedges or pieces. Take a saucepan and pour the filtered water into it. Add the peach pieces, vanilla flavor and cane sugar. Bring the whole thing to a boil. Then switch it down and let it simmer for about a quarter of an hour.
- Pour or drain into a large bowl lined with a sieve. Possibly puree the resulting pieces of fruit and set aside. Use elsewhere later. If you like, you can filter the captured fruit juice again.
- Pour the fruit juice into a large jug and hang a tea filter in it, which is either filled with loose tea or with tea bags. Let it steep for about 3 to 4 minutes depending on the type of tea. Wash lemon with hot water and rub dry. Cut into thin strips with a peeler.
- Squeeze the lemon and put it together with the peel in a glass jug or something similar. Remove the tea filter or tea bag and pour the rest into the glass mug. Let cool, cover and chill in the refrigerator for several hours.

- Wash the peaches, cut into wedges or pieces. Add to the mixing bowl along with the vanilla aroma, cane sugar and the filtered water. Close this (measuring cup on top) and set it to 15min / 100 ° / counterclockwise / mixing spoon so that it can boil.
- After the beep, open the fermentation basket and put the loose tea or, depending on what you have, the bags in it. Close (measuring cup on top) and set it to 3min / 95 ° / counterclockwise / mixing spoon so that the whole thing can pull. Then remove the proofing basket with the help of the spatula.
- Take the lemon, wash it with hot water and rub it dry. Peel off thin strips with a peeler. Then halve the lemon and squeeze out the juice. Take a tall glass vessel / jug or something similar and add the lemon peel first.
- Then add the squeezed lemon juice. Add the brewed tea with the fruit pieces to the lemon juice. Let it stand until it has cooled down and then put it in the fridge so that it can soak through it. Then filter.
- Take a tall vessel, line it with a sieve and gradually pour it into it. Drain and transfer to clean bottles. Store in a cool and dark area. This concentrate can be used in many ways, e.g. beverages, ice cream preparation, cakes, pies, dressing …
